Mexican Caviar

Drain:

   
  • 1 can of black beans
  • 1 can of lentils
  • 1 can of niblets corn
 

Put the beans and lentils in a strainer and rinse them with cold water before putting them into a large bowl.

 

Add the following ingredients into the large bowl with the beans, lentils and corn:

  • 1 cup of finely chopped red onion
  • 1 cup of red pepper
  • 1 cup of green pepper
  • 1 cup of celery

Mix together

 

Sauce:

  • 3/4 cup apple cider vinegar
  • 1/2 cup olive oil
  • 1/2 cup sugar
  • salt and pepper lightly
 

Heat the dressing just until the sugar dissolves.  Then let cool.

 

Pour the dressing into the bowl and mix in with the veggies.
Store the caviar in the fridge overnight.
In the morning you will need to drain off the excess sauce.

Serve with scoop taco chips.

It is gluten free, dairy free, nut free and vegans and vegetarians will love it!!
It is a hit with everyone that tries it!!
It is really good on scrambled eggs, salads, etc….
